The fresh ewe's milk cheese has a white texture and very delicate and mild taste that lingers on the palate. The fermented ewe's milk cheese is matured in carefully designed fermentation units that gives the cheese a pale straw colour and a more distinct taste than the fresh cheese while still maintaining a delicate flavour that is never salty or sharp. All the flavour of fresh milk from the hillside pastures can be tasted in these excellent cheeses.
